1-hour pork carnitas

(warning: this post is basically just an ad for Instant Pot. the sad part is, i'm not even getting paid, i'm just stanning hard.)

so. take that frozen, neglected pork shoulder that's been chilling in your freezer for 3 weeks and throw it into your Instant Pot on the sautée setting with some butter and brown it up on both sides.

throw in 2 cups of chicken or vegetable broth, a can of tomato paste, a handful of garlic cloves, some fresh cilantro, salt, pepper, onion powder, cayenne, and a splash of apple cider vinegar. (or lime juice.) i also threw some chopped red & yellow peppers in there, as well as a bag of frozen riced cauliflower.

(as far as macros go on something like this, i honestly have no idea. it prob sounds like a lot if you throw everything into MFP, but if you're like me you don't actually wind up eating most of the stuff that goes into the sauce anyway.)

anyway, set the Instant Pot to Meat/Stew for 60 mins & then go watch two episodes of something funny; be sure to cackle & pat yourself on the back over how easy this dinner was to make.
