I'm sorry but, my grandpa very much has bipolar disorder and I'm not at all talking about the reality of living with it or what it is. What I'm saying is taht there is more than one meaning of bipolar disorder, and you're deliberately choosing to interpret a statement as randomly being offensive rather than thinking for a second and considering that they may not have meant for it to be offensive, and that they may not have meant bipolar disorder at all.
Again, I'm not being some kind of voice for a group of people, I'm literally just saying that it's unfair of you to randomly, out of the blue, compare someone making an interpretable statement to blatant homophobia.
What I'm saying is like "Hey, they may not have meant it in that way," to which you responded "no, my interpretation is the only right one," to which I responded that it's better not to assume the worst of people.

I do think that "That’s not what Bipolar is like, I assure you," can come across as rather sarcastic in the context. You're not really stating any fact at all, you're just making a remark. And I do think it's a rather snide thing to say in the context since you are criticizing them indirectly and rather rudely due to the promptness of the statement.
