If the M.2 NVMe is the only storage device figured into the build, that's fine. I can always invest in a larger SATA SSD/HHD later on.

OP wants to play multiple games however, so 250gb is a bad idea.

When the OP invests in a larger SATA SSD/HDD later on, THEY CAN STORE ALL THE GAMES THEY WANT ONTO IT.

When will that be though?

Later. Later can be tomorrow. Later can be next month. Later can be when they feel like installing multiple games at once.

You can cut down on some other things to fit in a better SSD, those HP models really aren't that good.

That decision is on the OP of this topic. That HP model works flawlessly.

By the looks of it, I've got inside your fragile mind. Which is good, because all your build suggestions really aren't that good, and you need to be told that.
