I might be wrong, but this isn't how it is. You're supposed to grab the wrists, as you could have a blade hidden under your sleeve. Think Assassin's Creed's wrist blade, but not so fancy or mechanical.

So it's a sign of trust/distrust. Trust as in, you trust the other person enough to come unarmed. Distrust as you don't trust the other person to not have a weapon.

It's a science as well, because depending on how you handshake means a lot of things. Open palmed or showing back hand means two different things. You might not realize it, but it could be a clear indication of personality. Being aggressive power move or submissive welcoming move.

Then comes in how you receive or take the handshake. Like I said, it's a science and you can read people from handshakes. Handshakes are very important, more so I think than a first impression.

Then, you go into handshaking with a woman. Not to be sexist, but unlike tradesmen (as they seem to be the last few who give good solid handshakes. Think King of The Hill.) You can't go full beans into a shake with a woman. There's also the grip for when men used to kiss women's hands, that's always a safe bet with women. Since a lot of them give you the back of the hand anyway.

I'm probably explaining this wrong, or horribly, but it's very interesting stuff. Oh man, I forgot to go into the whole tug of war of grip strength.
