[Advice] 1 year old cat diet?

Sigh. Vet schools aren't funded by those companies. All students get is a few free backpacks and maybe a free lunch a year, during which they hear about prescription diets. Most vets couldn't care less if someone feeds Hill's, Royal Canine, etc. to their healthy pets - we just care that pets with specific medical needs are fed appropriate diets, which often are prescription (formulated by boarded nutritionists).

You are a creepy internet conspiracy theorist if you push "ALL VETS ARE IN THE POCKETS OF XYZ COMPANY". Relax a bit, realize that it's nowhere near the level you think, and accept that most vets want the best for their patients regardless of what company they buy food from. I agree, high protein low carb foods are best for cats. Some grain isn't a big deal at all unless a cat has specific needs, but if you want to stick with zero grain that's not a problem.

Deep breaths. Vets are not the enemy. Sometimes prescription foods really are more optimal than over the counter. It's all ok.
