After Thanksgiving, I feel absolutely ill. I’m ready to get healthier and stop poisoning myself with garbage food. Advice requested: simple beginner ideas

I have 2 kids and my second (who is now 10 months) couldn't stomach any dairy consumption through breast milk. Neither could my first but no one told me that is what was going on, alas, here we are and that's how my journey started. Then during maternity leave I read "How Not to Die" and it changed my whole perspective. I am mainly in this for health reasons. Nevertheless, I am seconding the recommendations for Costco and an InstantPot. Beans, curries, rice, potatoes - the IP makes it even that much easier! And you really can't beat the prices and selections at Costco. I am not as steadfast as some of the others here in the community as I will sparingly use oil and salt accordingly. Baby steps, right? So some of my suggestions below may be deemed sinful here, but it is what is working for me.

Here are some of my favorite easy meal ideas. I will usually make a big batch of beans up in the IP in the beginning of the week, so when I mention them below, they are already cooked! Easy peasy.

For breakfast, I drink a protein shake. I usually add some beet powder or chia seeds, and non-dairy "milk" or do a coffee one with just non-dairy milk, coffee, protein powder.

For lunch, salad greens topped with pinto beans, onion, salsa. Or a sweet potato topped with pomegranate seeds, nutritional yeast, garlic. Or a salad (spinach, apple, walnut, Dijon). Or a grilled cheese with Dave's Killer Bread and Chao. Sometimes I will make up a big batch of either Basil Tomato Soup or a Pumpkin soup (again in the IP) in the beginning of the week and eat that. I will happily pass along the exact recipes if that sounds like something you'd be interested in.

Dinner ideas: roasted veggies, beans, rice. Homemade Falafel. Mushroom risotto (again IP). Salads or lunch items. Baked sweet potato "fries" with black bean walnut "burgers". Cauliflower tacos. Pastas - except I am not really a pasta gal but my family is. I will usually just throw my noodles in a bowl with cherry tomatoes,capers, onion, and mushroom and call it a day. Coconut Lentil Curry and brown rice (again IP for both). 15 bean soup without the meat addition. A potato, Navy and Lima bean, kale soup (again the IP). Lentil chili. Hummus "quesadillas" which is really a tortilla with hummus instead of cheese and filled with various veggies like onion, spinach, cherry tomatoes, garlic, etc.
