AITA Making my vegetarian daughter make her own meals

YTA. You're talking about ending the family's routine of sitting down to dinner together because you have some weird need to take your daughter's dietary preferences personally. People in these comments are acting like she's a spoiled brat demanding that you prepare every bite of food to pass through her lips, but that's not what it sounds like at all. It's entirely ordinary for one person to cook a family meal (and it's apparently your established routine).

I'm sure she's capable of making something for herself, but she can't do it while you're using the kitchen to cook your meat-laden meals. I guess you and your wife can eat while she fixes her own food in the background, but it seems like you're losing something valuable for no good reason. There are a lot of people out there who wish their teenage kids wanted to sit down and eat dinner with them; you're deliberately throwing it away for frankly incomprehensible reasons.
