"Alexa, how many genders are there?"

This roles and society bullshit is based upon your sex.

You don't stop to karyotype everyone you meet before deciding how to interact with them. Men and women are expected to look, dress, and behave in particular ways. Suits are associated with men, dresses with women, etc. This is a totally arbitrary social norm that is not based on any sort of biological determinism or convenience.

And there's nothing stopping other cultures having different social norms, including one's that don't fit neatly into our categories of men and women. There's a whole host of past and present cultures that had a third gender. They aren't mentally ill, and these cultures aren't "wrong" for recognizing third genders.

Except that whole part where chromosones can be used to determine what gender someone is.

Hmm, then what about XX male syndrome? With your definition (which is not what actual researchers use, btw), we should say that they are female. But they are phenotypically male and live their lives as such. Now, you will probably retort by saying "but that's such a rare case it doesn't matter!!!" Well, it does matter because if you claim that some statement is true for all x, then if it is untrue for some x the whole claim is also false. That's just logic.
