All known published protein bound structures of pyruvate, as of 2016. Found from old PhD project. I did separate computational work of pyruvate salts showing that the larger the counter ion, the easier it adopts non-planar form.

If I can be honest, I'm a little annoyed this comment is getting upvoted so much. I didn't post this to boast my own work. If people want to use this sub to give fashion advice about what to wear to PhD meetings, I thought I would at least throw out a random (and perhaps useful) bit of info to some science PhD out there. I'm not pushing my work. I just found something PhD related, so I posted it. It was a neat finding. Pyruvate is a very important and highly reactive molecule. To date, I don't think anyone has really looked into pyruvate in this way. Almost any textbook will tell you it is planar, but it is not so much. I'm done with this work. Im just throwing it out there. If what you say holds true, this may as well be a fashion site or an unemployment blog. Sorry you feel it does not fit.
