Let me just preface this by saying that I realise I come off a bit nasty to you, and I'm sorry about that; I really am glad you're enjoying your playstyle, but I don't think it's right to praise people for misusing the forest

I feel that drinking in a duel is also unfair like ganking.

Let me start by saying that that's your choice. Very few people I fight have the same qualms; if you enjoy the extra challenge go for it, but it's not mandatory at all.

And the NPC's not attacking isn't as big of an advantage as you think; but it does add a bit of strategy to things. That being said, the host can summon phantoms pretty much as long as there are summon signs. The forest NPC's don't respawn until the host rests at a bonfire. Which adds even more strategy. And trust me; an infinite supply of Sunbros is worth a LOT more than a few NPC's who will only attack if you're in range.

Also, as for the human thing, if people don't want to fight unfair, there are several places they can go to do that. Darkroot is deliberately different rules so that all sorts of crazy stuff can happen. Yet people still go there as invaders, or join the forest hunters, despite knowing that anything could happen.

As for summoning on me, actually it is pretty fun. I had a crazy moment the other day where there was a Sunbro tank, and a host caster. It was heaps of fun bouncing around trees fighting the sunbro, and then trying to charge the caster. Also luring them into a mushroomy ambush. I lost, and that was inevitable, but it was a tonne of fun. Unfair? Probably. But it was still fun.

That's the issue I have with players doing this "honor" thing in the forest. When you say that, all I hear is "how I want to play the game is right, and how you're playing it is wrong". I like the idea that if I walk into the forest, or get told that I'm being summoned as a phantom, anything could happen. I could see a giant dad host, and a giant dad darkwraith, and have an epic zewihander storm where we all two hand (yes, that happened). I was always gonna lose that fight, but damn if it wasn't fun as hell, despite them doubleteaming me.

There are so many places you can go in DS for dueling, where the "honor" thing is really well understood. There are also a handful of PVP items that you don't need a covenant for. I don't see why that extends to the forest, which is literally the only place I can go for insane, unfair action. A place literally designed for the devs to cater to people like me who find the dueling boring.

And let's be honest. If you're playing Dark Souls, why do you care about fairness?
