Anarchist colonies?

????? Sure, western civilisation (which isn't a coherent thing but whatever we will roll with it) has produced many works in the direction of liberty, but it also produced fascism... so I wouldn't really say the on the whole western civilisation can claim a monopoly on the virtues of egalitarian decision making and a notion of caring for each other.

I think that setting up anarchist colonies in order to spread anarchist thought abroad is a very good idea.

You know that anarchist experiments have already been set up outside of europe right, if we water down our nations a little bit we have the EZNL in Mexico, FEJUVE in bolivia (not anarchist but linked to syndicalism), the Korean free territories... there have been anarchist writers from south america, north america, africa, the near east, the orient, and anthropologists with an egalitarian bent seem to be overflowing with examples of egalitarian communities from accross the planet. Anarchist ideas have been "abroard" since anarchism has been a thing.

However I also feel as if they can be organized in a democratic manner with universal consent of the people colonizing.

I think you are maybe conflating the idea of colonies as they exist in relation to empires and colonizing as in "people go live in a place"

I have always found the idea of vast empires very satisfying and think it would be sad to give them up under anarchism!

An empire is kind of definitionally a construction of political power. Like, if an anarchist future is ever to happen you could draw a map with a big red and black blob on it and say "this is where the anarchists live" but thats not an empire.
