I actually stated one of the reasons i want to make them is to avoid processed foods :)
I really like the rolling oats idea with flavours, and baking them !! This idea didn't occur to my mind. Will try it and update you, I suspect I'd like them much more than the "healthy" oatmeals, especially because of the crunchiness and sweetness.
I do make croutons, and love them, but not really what I'd have with milk for breakfast or dessert. Speaking of croutons, I cut Lebanese pita into pieces (you could use pita bread), sprinkle some thyme (and sumac and sesame seeds... which is actually Zaatar, a mix found in middle eastern shops), and olive oil, and bake them. They're like light crackers :)
