Anybody have tips for closing prep on time or early?

Chipotle is my first job, and I've only worked here starting early April. They put me on salsa prep in the AM, and I exclusively work only on the weekends from 8am-4pm. My trainer is a TOS and she's probably the fastest person in there. She trained me on shredding cheese, dicing tomatoes, making the actual salsa (corn and mild), and liquids (sour cream, red salsa, and green salsa). On top of that, I also get on the line after I prep, clean, wash the dishes; then restock, and make more salsa before I leave for the PM shift.

I've been having problems getting finished on time, and I try to be a TOP PERFORMER, but it's not happening :/ Making all of that was fine with my trainer in the first week that I worked since she's fast. Other than salsa prep, I do well when I'm on the line, and I engage with the customers often to personalize their Chipotle experience.

It also doesn't help that my store is fucking busy (we are in San Diego). We have crazy lunch rushes, and we are busy at night as well. Employees from other stores have told me that they don't prep as much as we do. So yeah, I have to make a lot!

Anyways, today I called in telling my GM I can't make it to work on Sunday since I'll be healing from a wisdom teeth extraction. I was honestly scared to ask since I asked for the weekend off two weeks ago, and she seemed annoyed even though I had let her know ahead of time (to be fair, before I even started to work there, I had told my GM I specifically needed to get that weekend off; additionally, I reminded her about it a week before, then I came in two days before to find out that she had forgotten about it). She told me that I haven't been "performing to the best of my ability (i.e. probably me not finishing my salsa prep on time)", and that I've been calling off work "a lot." So she suspended me. It's actually kind of embarrassing that she did.

I feel bad because I know I haven't been able to finish my deployment on time, but, on the contrary, I feel like she was a little harsh on me. I also feel bad because my GM is super picky on hiring new employees. We are constantly understaffed because my GM interviews a lot of people, but doesn't hire as much as she interviews. I was one of those people that she hired since she probably thought I could be a TOP PERFORMER..

I've honestly been thinking about quitting anyways cause it seems like this job isn't for me - at least, not salsa prep! I wanted to get this job because I needed experience. I don't really need the money. I am also a full-time pre-nursing student, and I do high-volume training with heavy weight for at least 2 hours when I'm in the gym. Having this job has kinda put a stump to my studies and training even though I only work on weekends.

So, should I stick this one out and wait until I'm done being suspended, or should I quit and maybe get a different job? I could possibly work at a less busy Chipolte...
