Has anyone seen any of the newly released UK UFO files?

Yes, it is easy to see the files. If you plan on doing so, I'd STRONGLY recommend applying online prior to your first for a (free) "reader's ticket" on the website of the National Archives, which gives you a user ID that you can use to book several files in advance so that they are ready for you when arrive. This will save you from waiting around for an hour or so on the day for the files to be found.

(With new files, pre-booking the files also means that they should be available for you rather than loaned out to others. This was pretty useful when I went to look at the files on about the first day after their release since a couple of others were there to look at the files as well).

You can photograph most files at the National Archives (including the UFO files) but they are subject to Crown Copyright so you would need the permission of the National Archives to post images of the files. They charge for this permission and impose other conditions.

Due to the various conditions imposed by the National Archives, I refrained from posting my photos of some of the new documents after looking at them upon their release.

I did post a few brief quotes from the new files (and details of the conditions/payments imposed by the National Archives) in a thread in this sub-reddit at: https://www.reddit.com/r/UFOs/comments/6jv86u/the_truth_seldom_sells_books_british_ministry_of/

I had an email exchange with a friendly manager at the National Archives seeking to persuade him that (as with the previous files) it would be a good idea for the new files to be made available free online for 30 days on the website of the National Archives. While that friendly manager was initially willing to engage with my emails, unfortunately that exchange died out without any promise by them to post the files.
