Applying at the beginning of the last year of my Bachelor's or taking a gap year

I also did a 3-year Bachelor’s in Europe, decided on applying to top Master’s programmes in Europe right after graduation, but it was too late to get scholarships (or even admissions) for that Fall season. So I enrolled in my uni’s Master’s for that “gap” year, focused on research, applied to a bunch of universities to start fresh with my Master’s 1 year after getting my Bachelor’s.

I only received a question related to this in an interview (basically why did I decide to switch the Master’s and not complete the one I’m doing at the moment), otherwise nobody seemed to care at all. I received acceptance letters to all these programmes and scholarships to all but two of them, so I’d say that as long as you have an active “gap” year and have a clear explanation for why you took it (and you’re ready to maybe explain how you’re spending this year), I’d say it wouldn’t matter.
