Why are From Software players against difficulty options?

It's significantly harder to balance a game around multiple difficulty modes and the difficulty of From Software games is usually a function of how many helps you use to get through different scenarios.

You can typically pull in support phantoms to get you through boss rooms that invaders can't follow you in, look up specific strats to cheese or otherwise get through specific areas of the game relatively simply, use boosted builds like getting magic up and running early on in Elden Ring.

The tools are there if you want to make the world around you easier so there's not much incentive for From Software to deviate from the tuning they've put into the game or the vision they have of it being a uniformly presented difficulty that players grapple with according to their own unique experiences.

That uniform difficulty is part of the charm of the game, part of their branding identity. Adding additional difficulty levels would change the game's identity.
