Why are many (not all) Christians so against homosexuality, while they completely disregard other parts of the bible that forbids things, like eating shrimp or wearing mixed fabrics?

I am a Christian and, honestly am, honestly, against homosexuality. This doesn't mean I would go up to a homosexual and just bash them but I'm not going to agree with it and if someone asks, I'll tell them why. I am also against the other things that you have pointed out that lots of Christians tend to disregard. And it is true that lots of Christians tend to disregard these things.

The first reason for this is that most of them don't actually study their own religions or beliefs but would rather listen to the, more often than not, flawed doctrines that are taught to them. And they tend to have this hive-mind type belief where they have to believe what everyone else believes and the pastor knows all. I typically do my own studies because when someone of authority's mind is set on something, it's highly unlikely that they will accept what is true with so many people following them.

Secondly, a lot of Christians have this flawed belief that when Jesus came back, everything that set them apart was done away with and they could pick and choose. Some of them even believe that being under grace means that you can go and do a sin deliberately and not be held accountable for it when being under grace simply means that if you didn't know it was a sin before you did it, you wouldn't be held accountable.

Lastly, a lot of people aren't actually ready the belief wholeheartedly but they want to call themselves Christians simply for a title, for show.

All in all, true Christians don't disregard these things but people who are deceived and don't take the time out to learn for themselves do.
