Are my financial expectations completely skewed?

So my response is based on comments and your post

I make ~$70k gross salary per year which I’ve been told by several people, including my own parents, is really good.

For example an art major right out of school in a LCOL area making $70k is crushing it. A software developer with 3 years of experience is getting screwed.

It’s also apparently significantly higher than the U.S. median salary.

You'd get more useful data by looking at your region, and even your job. You're using a number that not only includes software developers in Silicon Valley, but store clerks in the poorest cities in the country. $70k for a 2 person household isn't that great though. Perhaps your wife should work, especially considering she is the one that wants expensive organic food, not you.
