Why are people still debating on whether high ldl-c is a risk factor for atherosclerosis?

There are diet camps that eat a significant amount of meat and dairy.

Meat and dairy are the highest sources of saturated fat in the diet.

The reason people are eating so much meat and dairy, and for some only meat and dairy, is a claim of being healthy. Some claim it will make you live long.

So, to claim a diet high in meat and dairy is healthy, you have to somehow challenge the saturated fat - cholesterol - heart hypothesis. Because the conventional understanding says high sat fat will mean high LDL and high LDL means high risk of heart disease.

There are a lot of people making a lot of money and gaining following by pushing these diets. It’s in their interest to challenge the model because their livelihood/social media clout depends on their claims of supposed health. They can make a lot of money by telling people that eating the same food that caused the heart disease and insulin resistance (saturated fat) is actually good for you and - in fact - the solution to all your woes!

And people love this - because they get to eat fried meat and processed dairy and think it’s good for them. They can eat burgers with cheese and claim it’s a health food. Fry in butter and it’s ok for you - only seed oils are bad! They can fry steaks in butter and slather cheese on top and claim it’s the most healthy food on the planet.

Bias and financial/personal interest that results in cognitive dissonance.
