Why are people who are out of work making more in unemployment that essential workers at restaurants and grocery stores?

Unemployment is based on what you were earning before you lost your job (up until you hit a cap.) You contribute a percentage of your earnings as you work, and when you're out of work, you get back a percentage of your earnings. Basically, the more you earn, the more you pay, the more you'll get when you receive the benefit.

It's set up that way because 1) progressive taxation feels more fair, and 2) it helps maintain the standard of living for people so the economy doesn't crash.

Keep in mind that employment insurance is more for the broader economy than it is for the individual receiving the benefit. You get paid when you lose your job, so that I don't lose my job.
