Whether assimilation is easy or difficult is up to you as everyone has different abilities, however, I think your potential assimilation process in Poland may be a tough challenge due to cultural differences and language. In eastern Poland, we have Tatars who profess Islam, they are fully assimilated because they have lived here for several hundred years, but they are completely different from those muslims in the Middle East and North Africa. As for discrimination and in your case Islamophobia, it is less in big cities because of the tourists or students who are there. But if I am to be honest Poland is not a good place for muslims, even if you are "liberal".
