[I ate] Texas BBQ

Lol nope you are still wrong. Please go to any actual Texas barbecue restaurant (not Dickeys which I suspect is where you've been) and ask for Texas toast. You won't get it. The star of the show is the meat--the purpose of the bread is to be a simple vessel, either to soak up juices or make a sandwich out of. There is literally no advantage to toast for either of those things.

The onions are cut fine. You are not supposed to stuff the entire pile of onions in your mouth at once.

I didn't comment on the quality of the meat because that's not my point. If this is Rudy's then there's tons of better options in the state. But they all will look like this in terms of sides and presentation. You can't call an entire style of cooking lazy just because some sides aren't dressed up to your weird standards.
