A baked pasta with tofu ricotta

First time making tofu ricotta. Didn't really follow the recipe very closely and forgot a few ingredients but it turned out so good!

Half a block of tofu The juice of one lemon Sautéed garlic and onions(three or four cloves and like a quarter of a yellow onion, minced) A splash of ACV 1 tsp of garlic salt 1 tsp of Italian seasoning 2 tablespoons of aquafaba Whatever pasta you want Whatever sauce you want

Sauté the onions and garlic until translucent, put the pressed tofu into a food processor or a blender( I used a nutri ninja). Then add the seasoning and lemon juice and whatever the hell you want to add. Personal preference and everything, get fancy. Add the aquafaba so the tofu ricotta has some ~moisture~ then blend until everything is incorporated and tastes, looks good.

Slather it on your mixed up pasta and sauce ( didn't write this down because common sense) inside your baking dish, sprinkle some extra seasoning on top so it looks pretty and cover with aluminum foil

I put my oven at like 425 Fahrenheit and babysat the pasta bake. I checked it at about 15 minutes and stirred it all up then I put it back in for like 20 more minutes.
