The behavior of the people of what Latinamerican country has surprised you the most?

I'm from Chile too, I've worked at 2 restaurants for 4 years so I've worked with people of lots of nationalities. All the peruvians and haitians I worked with were very professional. Good manners, impeccable uniforms, good at what they did ("no se apanaban" like we say here). There was this one peruvian waiter who was absolutely insufferable and acted like he owned the place, but he was undeniably a good waiter.

Also not latinamerican but the first restaurant I worked at was chinese and I was shocked by how much chinese drank. The owner once brought a group of friends - like 12 people or something. I was the bartender so trust me when I tell you they drank TEN bottles of wine AND several mojitos AND pisco sour. It wasn't just then, the chinese employees would party with the rest and everone would tell me about how they black out in like 10 minutes and liked doing "africanos" and stuff like that.
