Best long-lasting healthy and nutritious food to stockpile for your food preps?

IMO generally it would be various type of canned foods (I know freeze dried might be better but they are more expensive), not all canned food are really nutritious, but being canned meaning there's no need to preserve them with other additives like salt. It's not always true, there are plenty of salty canned foods around - like soups and spam etc, beans in Brines.

Also because canned foods does not require additives, that means it can have a much bigger variety of different types of food, like fruits, veges, meat and grains..

Dried foods on the other hand would have a much smaller selection.

I also agree with the other commenters about SHTF situation even if processed meat raises your colorectal cancer risk by 30% so what? your primary concern is to get thru this season, and not the next 30 years.
