Best way to get rid of a loud pick attack?

I'm not sure what problem you are describing--technique or recording.

From an engineering perspective, the worst thing I have heard is when the guitarist is recording a very quiet amp, and you can hear pick noise in the room leaking into the microphone. This is pretty common on Youtube and drives me nuts. Solution usually is to stop using your camera or phone's built-in microphone and close mic the amp instead, or record direct.

If it's coming through a direct or close-miced recording, it is a technique thing that can be addressed through a more controlled picking hand. Basically you want to not strike or pluck the string, but move the tip of the pick smoothly over the string to get it vibrating, and you can do it with a thin or thick pick. Certain tones exaggerate unwanted pick attack more than others.
