Boss keeps asking me to work after hours and weekends without extra pay

TLDNR: You're being taken advantage of. Do what you need to do to find other work. Or have a mental or physical breakdown.

First: Are you paid by the hour, or are you paid a yearly salary? While I don't know the situation in your country (and you didn't specify where you are), generally hourly workers have to be "clocked in" to work, and when they're on the clock, they should be paid. If you're on the clock but not being paid, that's illegal. Salaried workers can be asked to work after regular work hours, and your country may have spcific rules about how salaried workers should be paid for overtime.

Second, I'm intrigued by this statement:

my country demands a one month notice before quitting.... as most people seem to want someone immediately available.

Surely in a country where one month notice is required, employers don't expect people to be able to start right away. Unless they hire only unemployed people.
