Braising some lamb shanks in my massive #5 McClary Oval Roaster

I've probably made this over 25 times, it's SO good.

Recipe

Lamb Shanks with Red Wine Jus

Ingredients:

1 onion

2 celery stalks

3 carrots

4 cloves garlic

fresh thyme, rosemary, 1 bay leaf

2-4 lamb shanks, salt and peppered

1 can diced tomatoes

2 cups red wine (1/2 bottle)

2-3 cups chicken stock

Directions:

-rough chop onions, carrots, celery & garlic

-brown lamb shanks in Dutch oven

-remove lamb shanks

-deglaze with chicken stock

-add onions & garlic and cook until they begin to soften

-add carrots and celery and let them cook for a short time, and then add your herbs

-pour in diced tomatoes and stir

-add red wine

-bring it all to the boil

-add the shanks, meat-side down

-add chicken stock so that meat is covered

-cover and cook at 350 degrees for 3 to 3 1/2 hours

-while that's cooking, prep your mashed potatoes

-around the 2-hour mark, spoon out 2 cups of liquid into a measuring cup

-put the lamb shanks back into the oven, uncovered, for the final hour

-skim the fat off the top of the jus (leave a little fat 4 flavor)

-pour the liquid through a strainer into a pot

-heat the jus at medium-high heat and add half a cup of red wine

-bring it to the boil, and turn it down to medium heat to reduce by half

-get your mashed potatoes going (add a couple of knobs of butter and chives)

-once the sauce has reduced by half, take it off the heat and I add a couple of knobs of butter

-season with salt and pepper (if necessary)
