Buyback policy?

Bar manager here, and I help run a very successful locals bars with a huge industry following. We offer industry pricing all day every day, but we also extend that deal to regulars and residents of the building we’re located in. Each bartender has a $50 tab, and we max it every night. I’ll also spill entire bottles if we have some sort of special occasion. I’m all for giving away drinks, as long as everything is accounted for. It’s this level of comradely that has led to our success.

Even with everything we give away, we still maintain a 14% liquor cost, and average under 4% in alcohol variance. We allocate 5% of total sales to liquor comps, but end of year we typically average 3.5%, which is still about 150k a year in comps. Might sound kind of crazy, but so is doing $4M a year in a 1000sq ft space with a staff of 15.
