Catholics: what is the most important thing I'm missing as a protestant?

And who told you that the books of the New testament are authoritative, if not the church fathers, who were ordained catholic bishops and priests.

The Bible can be interpreted 10000 ways. The only people capable of deciding whether a particular interpretation is correct are those whose authority stems from apostolic succession.

You might not like the idea that there is a group of people descended from the first apostles themselves who the holy spirit gives special graces to in order to ensure that their teaching is authoritative. But the Bible was also written by men, and you were willing to believe exactly this about the men who wrote the Bible.
