Chicken parm w/ roasted sweet potatoes. Enough for the week!

I don't have an exact recipe and I didn't use precise measures, so here is what I basically did -

Chicken Parmesan 1. Preheat oven to 450. 2.Butterfly chicken breast and pound the thicker pieces so they are all nice and thin. 3. Season flour (salt, pepper, onion powder, garlic powder). Crack and whisk eggs. Spread panko bread crumbs on a plate. 4. Dredge chicken breasts in flour, then egg, then coat generously in bread crumbs. 5. Fry 'em off in a skillet on med/high heat until crispy and brown. 6. Place on a lined baking sheet and spoon pasta sauce over top. 7. Add sliced mozzarella on top of tomato sauce and sprinkle with basil and parmesan. 8. Bake until ooey gooey and delicious, or about 15-20 minutes.

Roasted sweet potatoes 1. Preheat oven to 450. 2. Wash and cut potatoes into uniform shapes. Dry well. 3. Sprinkle 3 tablespoons cornstarch over the potatoes. 4. Drizzle oil and your seasonings of choice (I used paprika, onion + garlic powder, and s&p). 5. Bake for about 20-30 minutes.
