chocolate macadamia brownie cake

ingredients:

cake:

  • 1 cup macadamia nuts
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 3 oz chopped dark chocolate (i use Lindt 90%)
  • ½ cup coconut oil, melted
  • 2 tablespoons erythritol
  • 1 tablespoon Splenda
  • 3 large eggs
  • 1 teaspoon vanilla extract

glaze:

  • 1/4cup Swerve confection (powdered)
  • 1tbsp cocoa powder
  • 1tbsp heavy cream
  • 2tbsp water

directions:

  • throw macadamia nuts, salt, and baking soda into food processor and grind until it's the texture of gravel
  • add chopped chocolate and coconut oil to mix and blend until smooth
  • add erythritol/Splenda (or your sweetener of choice), eggs, and vanilla
  • transfer mixture to a greased baking pan. (i used a 9x5 loaf pan but a standard 8x8 is fine too.)
  • bake at 350° for 25-27 minutes, batter will set when cooled.
  • for the glaze, combine Swerve & cocoa powder together in a small bowl. add heavy cream and water and stir completely.
  • cool cake for at least 30-40 mins, then add the glaze and set in the fridge for about an hour.
