The sumo guy stood up though, which is not a smart tactic. So, here, even if the sumo was a champion sumo, his technique was worse, and better training for the event could have easily produced a different outcome. However, I think this particular thing would essentially end up in a stalemate.

OP is wondering whether proper training and technique can overcome the physical weaknesses we have. I would say they at the very least stand a very good chance.

We're talking no rules, so we know what to avoid about the orangutans, and we can do things like attacking the jugular, or gentleman's area, if so adorned, and all other kinds of weaknesses that martial arts typed knowledge could exploit.

Obviously strength makes a big difference as well, and orangutans are not stupid, which makes it more difficult, but training which has generations and generations of wisdom designing powerful techniques and reactions to certain circumstances, and knowledge to recognize and exploit situations is very powerful.

I mean if you give me a much more powerful, and much stronger and more athletic human being that knows nothing about fighting whatsoever, and a smaller, lighter, weaker, human being that has extensive knowledge and experience in fighting, including grappling, and have no rules, then I would take the smaller weaker guy if I had to place a bet.

However, in fighting, anything can happen. One quick misjudgment, one error, one slip, on mistake, and it could all be over. So, I think it is possible for an orangutan to be beaten by a knowledgeable and well trained human being. But I think every human is different and every orangutan is different, and even if you pitted the same two against each other over and over, I would expect different outcomes.
