Why would you? Just because you may not believe someone could change their sex/gender, doesn't mean you shouldn't be polite to them. They are fellow human beings. That said, if someone is being douchey and controlling about your works, then politeness can be set aside if you'd like.
In regards to your personal beliefs about trans people: who cares? And I mean that in a nice way. You don't go up to someone driving a Ford and say "Ford are for dummies because they break more than a Japanese car does", right? Keep your views to yourself, unless you are in a situation where to do so means you are subjugating yourself to another's whims.
