You know you're comparing a digitally colored version of the manga to the anime, right? The actual manga has no consistent color scheme, but there are canon colors, such as Dio and Giorno's golden hair, Caesar's blond hair and green eyes, Jotaro's green eyes and Polnareff's silver hair and blue eyes (which the digitally colored manga actually contradicted).
