what's the point of the clause if the club doesn't even want to sell the player?

You have to differ between 2 release clauses. In Spain you MUST have a release clause in the contract, you are obliged to do so. But I think it's only in Spain. In all other country it's usual that no club want a release clause but the player wants. Best example here is Erling Haland from Dortmund. He knows that he is a big talent but probably didn't want to go from Salzburg to Madrid (example) directly, so he chose Dortmund as his next step. To make sure that Dortmund won't block a transfer in 2-3 years, when he wants to go to an even bigger club, he negotiated a release clause. In this case Madrid could pay the release clause (it's rumored to be 75M) to buy Haaland. If there wasn't a release clause Madrid would have to negotiate with Dortmund and we saw how hard they are in the negotiate negotiations with Manchester and Sancho.
