With a projector, you just trace around the projection, and colour it in.
http://www.isupportstreetart.com/abstract-anamorphic-circle-by-truly-design/ With this piece, it is a projection of a circle, but as it isn't on a flat surface, the image travels all the way down the hall. But by tracing the image all the way down the hall, if you stand in the same place as the projector was placed, you see a flat circle. Simple but very effective. And of course this only helps get the correct perspective. You need to have an awesome piece of art to paint in the first place.

With grids, it is just the way artists have always scaled up their work. Most grand paintings of the past were all smaller more manageable paintings to begin with. Then the artist overlays a grid, say 1''x1'' on the smaller piece, then grids out a larger canvas, or in street art, a wall. Say 1ftx1ft. Then you copy each square from the smaller piece onto the large canvas/wall. Making it far easier to stop things going wonky.
