Eating uncooked quinoa?

Once a grain is cooked, it expands in volume and weight, because it has absorbed lots of water/cooking liquid during cooking. When you are looking at nutritional info, it's usually based on a set volume (say 1 cup) or weight (say 100g). That's why all cooked grains/beans will have "inferior" nutritional value compared to equal volume or weight of their dry counterparts. There will be loss of nutrients during cooking for sure, but not significantly. Most grains should be eaten cooked for better digestion and nutrient absorption. Soaking and sprouting is a good way to remove anti-nutrients and you can shorten the cooking time significantly with soaked grains. I know quinoa is not officially a "grain" but it's cooked and eaten like common grains such as rice.
