Episode 8 in a nutshell

They didn't try to strike the ship because the First Order knew it was game over for the Resistance. Hux and Snoke have been shown to be over dramatic and theatrical in how they act, and this was no different. It is their character flaw that allows the plot to continue.

As for Poe and Finn's plan, they didn't really have a choice of whether or not it could possibly work. They all knew it was a shot in the dark, and decided to go for it anyway. And of course it didn't work out either way.

I think most of these plot holes are from characters not acting logically, and instead acting like humans with flaws who make mistakes, and these mistakes have huge consequences on the story. Some people may not like this because too much hinges on how the characters feel, and isn't shown by what they do. I loved it because it made the story more personal.
