Every time they come out with newer graphics

Same here, I know everyone has their own preference but consider Shenmue 2 on the Dreamcast.

The Dreamcast was the first home console where developpers had the 3D horsepower to do whatever game they wanted and make it look reasonably good... and that console was made in 1998.

Of course, for a number of reason, that's something that didn't happen on the Dreamcast, but on the PS2.

May I add, "kids these days want their shiny graphics, back in my day what mattered was the gameplay" might be a very effective karma-faming rallying call, but everything has shown us that nothing could be farther from the truth. Between the indie-pocalypse and the rise of mobile gaming, it has been demonstrated times and times again that "gamers" as a broad category are and have always been fine with lower-tier visuals.

The reason many of these old retro games get a cold shoulder from modern gamers is their piss-poor QoL, experimental gameplay and control schemes, and paradoxically, perhaps the most delicious irony, because they actually to be visual powerhouses back in their day, except what remains 20 years later is a 480p game that runs at 20FPS and actually had its gameplay butchered in the name of pretty visuals.
