F**k it, should I just quit?

You're working too hard and for too many hours, for too little pay, for an employer that doesn't seem to give a shit about improving your job. I'd just leave, but that's me. You say you're working a minimum wage care job and can find another - which makes sense as that's the one sector I see advertised all the time, plus you have backup funds if absolutely necessary, so just leave on decent terms and you'll be fine.

Telling a potential employer that your last job was up to 60 hours a week for a prolonged period and you left because you felt you could benefit from a break to get yourself back to your best is perfectly fine, as long as you don't apply the day after you leave your old one. They'll see you can do the work, they'll see you can do long the hours, you just can't, or don't want to, do it non-stop for an indefinite period. That's more than reasonable.

Life's too short for crap jobs. Good luck, whatever you choose to do.
