Fellow veggie haters, how do you cope? I personally, am losing my mind.

As the other person hinted, I think it's really how you prepare them. You have to figure out which ones you like steamed, which ones roasted, which ones boiled away in a stew. I dislike spinach raw, but I'll blend it up in a smoothie with fruits and yogurt. Oh and I love it sautéed with garlic and parmesan cheese.

But I think truly, your biggest struggle is the mindset that you just hate vegetables. I know this is a problem for me with mushrooms. A long time ago, I decided, for reasons, that I hate mushrooms, I'll always hate mushrooms, and you'll never catch me eating them. To this day, I will not knowingly eat a mushroom. I could get over it. By doing what I suggested above and trying them prepared in different ways, but I'm just fine with hating mushrooms.

So, what I'm suggesting is to try to be a bit more open minded about trying them in certain different preparations. Add sauces. Adding a tiny pinch of diced bacon at the end of sautéing some asparagus takes it from 'eh, it's asparagus' to, 'wow, who knew asparagus could taste this good!?!'
