Cool project!
I recently saw a Roxanne Richardson video where she shows some old socks and explains their materials (some cotton some wool) and construction (including calf shaping. Unfortunately they're dated 1860s, so maybe not exactly what you're looking for but a cool example anyway! https://youtu.be/0GVnV1HR2vI
This got me interested so I did a quick Google and came across a couple interesting sites
This one looks more legit, talks about history and style and how hose were worn. Images link to museum pages where many have good info on how the socks were constructed https://fashionhistory.fitnyc.edu/clocks-clocking/
This one is a bit sketchier, but it's got instructions for sewing hose from woven fabric (or knitting flat and seaming) http://www.marquise.de/en/1700/howto/struempfe.shtml
