Fried California Burrito

My story of the Chimichanga.

I lived in on the second floor of an older apartment building. There was only three floors and only one apartment on each floor. It was built in the late 1940's. It had a front deck that could hold 20 people and overlooked what little skyline my city had.

There was oak everywhere. All the floors were hardwood and there were pillars reaching up to a very tall ceiling. I love that place. And I almost burnt it down.

I was frying a chimichanga when I stepped out to the front deck to have a smoke. I was only out long enough to have one. When I came back in, my frying pan was on fire. The flames were a good 3 feet tall. I stayed calm. Not big deal, I'll just move the pan into the sink.

So, I picked up a flaming pan full of ignited oil. The moment I did, I knew how badly I had fucked up. I got it to the sink, but the oil went everywhere on the counter. The paper towels that were right above the sink caught on fire. I batted them down into the sink and... turned on the water.

Once the water hit the oil, things practically exploded. The paint on the cupboards above the sink started to bubble. Flames were licking the very tall ceiling. I jumped back and realized it was too late. It was out of control.

I ran into the other room and called 911. They told me to leave immediately. Still on the phone, I ran back into the kitchen to see that the flames were a little less consuming. The water was still running and the roll of paper towels were in the sink and soaked. While still on the phone, I used the roll to dab out the flames on the cabinets. I told the operator it was fine now, but she said they were still send a truck to check things out.

The fireman stood in my kitchen kindly explaining a few of the do's and don'ts or grease fires. He couldn't have been more cool about it. Especially the part where he walked me about 5 feet out the back kitchen door to the staircase where a full fire extinguisher was attached to the wall I walked by for the last year. I never even noticed it.

From that day forward, in every place I lived, I put a fire extinguisher on the wall of every closet just inside the door.

tl;dr Chimichanga pan caught fire. The fire department had to show me where the fire extinguisher was that I walked by every day.
