That’s complicated to calculate perfectly. One option is to use a general fried chicken calorie count and assume that your own version won’t be too far off.

The other rule of thumb I’ve seen for calculating fried foods that are battered and breaded with panko (that’s not too different from fried chicken) is to calculate that it will absorb 10-20% of its weight in oil. That is, if you fried 100g of chicken, it would absorb 10-20g of oil (factors like total surface area will make a difference). Maybe calculate toward the top end and see how you go. If it’s a once-a-week thing, a slight miscalculation either way should be too ruinous.
