That verse, much like most of the verses in the Quran, are explicitly Historical. In fact, the entirety of the Quran should be read as history and not law. It is observance and critique of Earth from the perspective of a Creator. The Laws we follow are explicitly hadith and actions from the time of the Prophet. That verse was given when said "infidels" (the merchant guilds who had hunted them down for bringing monotheism in a polytheistic monopoly society, broke treaties and murdered messengers for over 2 decades) were doing fucky shit again and God pretty much said "Yo these guys have fucked around enough, time for them to find out."

Notice the usage of infidels and unbelievers throughout the book. The Infidels died 1300 years ago. The Unbelievers have always been and always will exist.

As for conversion we're literally told not to even try to. "We have cast veils over their hearts—leaving them unable to comprehend it—and deafness in their ears. And when you mention your Lord alone in the Quran, they turn their backs in aversion." - Surah Al-Isra, 17:46, Dr. Mustafa Khattab's translation.

Funny also, the book even talks about people like you:

"...Some of its verses are definite in meaning- these are the cornerstone of the Scripture- and others are ambiguous. The perverse at heart eagerly pursue the ambiguities in their attempt to make trouble and to pin down a specific meaning of their own: only God knows the true meaning..." - Surah Ali 'Imran, 3:7, Abdul Haleem's translation.
