Wow it’s like we are in the exact same situation. Definitely don’t block her. That’s just unfair and it’ll only make the situation worse. Which is actually something that I’ve done before with the same person I’m interested in right now. All it did was upset her and I immediately regretted it after. I think you should just tell her that you both need space if it’s really going to go no where. Keep in touch with each other. Stay friends on whatever social media you share with her. But keep a distance. Don’t hang out so much because you’ll probably just be upset when you remember that she doesn’t want to be with you officially. I know it sucks. I am literally in the same boat rn.
