Going to try my take on banana fosters mead..... wish me luck!

If you strain it and just use the banana flavored honey, it’s a relatively short run to being drinkable. Probably a month and a half to drinkable if you just do a 1gal demijohn. Bananas seem to make a ton of lees if you allow too much in and that takes a little longer to clear. This is why I just cook in the flavor and not use them in the process.

For a recipe I’d just start simple and see if you like it

Pour honey into crockpot. Slice in bananas Cook for a couple hours (your house will smell terrific.) Use slotted spoon or strainer to get bananas out. Eat the bananas they are awesome. Let it cool down. Don’t pour cold water into warm honey or it’ll crystallize.

Now make your traditional mead

Start your yeast (I prefer D47) in a small glass with some nutrients and energizer. While yeast is doing its magic, mix distilled water with the honey, use your hydrometer to dial in where you want it. I stay around 10-12% if it’s just gonna sit there, 8-10% if I’m going to add fruit or something later that may add sugar.

Pour into demijohn Pour in yeast, May add a little more ferm K or go ferm etc First night, leave demijohn in sink. D47 is aggressive. Leave a month and see what happens.

Second recipe: do all you just did but add cinnamon sticks, or cloves etc.

I try not to overcomplicate things anymore. I just stick with simple mead. Water honey yeast and something to add flavor.
