Having a bit of a tight month. Any cheap, filling, not-awful-for-you recipes?

-- red beans and rice

-- burritos. Use tortillas and any of the following: beans (or ground meat, but beans are typically cheaper at least for me), rice, shredded cabbage (cheaper than lettuce), corn (canned or frozen, whatever you can afford), salsa. If you can get shredded cheese, add that too. These are super filling and you can stretch the ingredients pretty far.

-- egg sandwiches: scramble some eggs, toast bread, eat. Add hot sauce or salsa if you want.

-- peanut butter sandwiches (make with bread or tortillas)

-- "Spanish tortilla" (I'm probably butchering the name): dice potatoes and cook until soft. Add peppers, onions, spinach, zucchini, whatever. Scramble eggs, combine everything in a cake pan or glass Pyrex dish, bake until cooked through.

-- chicken thighs and rice

I will echo the shoutouts for budget bytes! Also, if you have a Costco near you, I can usually get the best prices on food there. Get stuff that lasts for a while (eggs, tortillas, peanut butter, etc).
