It's not the lack of demand. Turks don't even call anything other than red meat, meat. You are obviously a troll because no one can get this wrong about whatever they are talking. OR you are from an alternate reality where everything about Turks are flipped to opposites.

Ps. Turks butchered red meat in the steppes and had extensive terminology for the organ meat that are still used by Uighurs exactly the same way in modern Turkey. We were eating mostly sheep and horses then but about ONE THOUSAND years ago we moved into Anatolia and doner kebab which is made of veal and young mutton was perfected in 1800s. It was made even before but horizontally. Red meat is a staple of Turkish diet since the very beginning.
